  • 2 large English cucumbers (about 1 pound total), thinly sliced
  • 1 medium red onion, thinly sliced
  • 1/4 cup fresh dill, finely chopped
  • 1 teaspoon kosher salt (for drawing out moisture)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper, freshly ground

Instructions

  1. Wash cucumbers thoroughly. If using English cucumbers, leave skin on. Slice into thin rounds, about 1/8-inch thick.
  2. Place sliced cucumbers in a colander set over a bowl or in the sink. Sprinkle with 1 teaspoon kosher salt and toss gently. Let sit for 20-30 minutes to draw out moisture.
  3. While cucumbers rest, slice red onion as thinly as possible. If desired, soak slices in ice water for 10 minutes to mellow sharpness, then drain and pat dry.
  4. In a small bowl, combine sour cream, mayonnaise, white vinegar, sugar, garlic powder, and black pepper. Whisk until smooth and creamy. Adjust seasoning to taste.
  5. After 20-30 minutes, rinse cucumbers quickly with cold water to remove excess salt. Transfer to a clean kitchen towel or paper towels and pat dry thoroughly.
  6. In a large mixing bowl, combine dried cucumbers, sliced red onion, and fresh chopped dill. Pour dressing over top and toss gently until evenly coated.
  7. Cover bowl with plastic wrap or lid and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Before serving, stir salad and adjust seasoning if needed. Transfer to a serving bowl and garnish with extra dill or black pepper if desired.

Notes

Don’t skip the salting step—it prevents a watery dressing. Use fresh dill for best flavor. The salad improves after resting in the fridge for at least 30 minutes. Can be made up to 24 hours ahead.
