This easy copycat recipe lets you make Starbucks-style pumpkin cold foam coffee at home in under 10 minutes. It’s silky, spiced, and budget-friendly.

Ingredients

Scale
  • 1 cup (240 ml) cold brew or strong brewed coffee, cooled
  • 2 tablespoons (30 ml) 2% milk
  • 2 tablespoons (30 ml) heavy cream
  • 1 tablespoon (15 ml) pumpkin purée (100% pumpkin, not pie filling)
  • 1 tablespoon (15 ml) maple syrup (or preferred sweetener)
  • 1/2 teaspoon vanilla extract (or 1 teaspoon vanilla syrup)
  • 1/4 teaspoon pumpkin pie spice
  • Ice (for serving)
  • Pinch of pumpkin pie spice or cinnamon (for garnish, optional)

Instructions

  1. Prepare your coffee base: Fill a tall glass with ice. Pour in about 1 cup (240 ml) of cold brew or strong brewed coffee that has been cooled. Leave about an inch of space at the top for the foam. If using hot coffee, skip the ice and pour the coffee directly into the mug.
  2. Make the pumpkin cold foam: In a small bowl or liquid measuring cup, combine 2 tablespoons (30 ml) of 2% milk, 2 tablespoons (30 ml) of heavy cream, 1 tablespoon (15 ml) of pumpkin purée, 1 tablespoon (15 ml) of maple syrup (or your preferred sweetener), 1/2 teaspoon of vanilla extract (or 1 teaspoon of vanilla syrup), and 1/4 teaspoon of pumpkin pie spice. Whisk gently to combine the pumpkin purée into the liquid—it should be smooth with no lumps.
  3. Froth the mixture: Using a handheld frother, froth the mixture for about 20-30 seconds, until it becomes thick and foamy. It should roughly double in volume. If using a mason jar, seal the lid tightly and shake vigorously for about 30 seconds. You’ll see the mixture turn pale and frothy. Pro tip: Warm the milk slightly (about 10 seconds in the microwave) before frothing—it helps the foam hold its shape longer.
  4. Assemble the drink: Gently spoon or pour the pumpkin cold foam over the back of a spoon onto your coffee. This helps it sit on top without sinking immediately. Don’t stir it in right away—part of the magic is watching the foam slowly blend into the coffee as you drink.
  5. Garnish (optional but recommended): Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam. It looks pretty and adds a little extra aroma with every sip.
  6. Serve immediately: The foam is best right after it’s made. If it sits too long, it will start to deflate. Drink it within 5-10 minutes for the best texture.

Notes

For best results, use 100% pumpkin purée (not pumpkin pie filling). Warm the milk slightly before frothing to help the foam hold its shape. The foam is best fresh and should be used within 5-10 minutes. For a dairy-free version, use oat milk and coconut cream. For a keto-friendly version, use unsweetened almond milk and a sugar-free sweetener.
