  • 1 cup packed light brown sugar
  • 1/4 cup pineapple juice (reserved from canned pineapple)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cloves (optional)
  • 1/4 teaspoon ground cinnamon
  • 1 (20-ounce) can pineapple rings in juice
  • Maraschino cherries (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Pat ham dry with paper towels. If there is a thick fat cap, score it in a diamond pattern. Place ham flat-side down in a roasting pan.
  2. In a small saucepan over medium heat, combine brown sugar, pineapple juice, Dijon mustard, melted butter, cloves, and cinnamon. Whisk until sugar dissolves and mixture is smooth and bubbling, about 2-3 minutes. Remove from heat.
  3. Brush about half of the glaze all over the ham. Secure pineapple rings to the ham with toothpicks. If using cherries, place one in the center of each pineapple ring and secure with a toothpick.
  4. Cover ham loosely with aluminum foil. Bake for about 10 minutes per pound (e.g., 1 hour 20 minutes for an 8-pound ham) until internal temperature reaches 140°F (60°C).
  5. About 20 minutes before ham is done, remove foil. Brush remaining glaze over ham. Increase oven temperature to 400°F (204°C) and bake uncovered until glaze is caramelized and deep golden brown.
  6. Remove ham from oven and let rest for 15-20 minutes, tented with foil, before carving.
  7. Carve and serve with pan juices spooned over the top.

Notes

Do not overbake; ham is already fully cooked. Scoring the fat helps the glaze penetrate. Double the glaze recipe if you want extra for serving. Use pan juices to make a sauce. Cover with foil for the first part of baking to prevent the glaze from burning.
