  • 1/3 cup (80ml) pure maple syrup
  • 1/2 cup (120ml) milk (any kind; whole milk recommended)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/2 cup chocolate chips, chopped pecans, walnuts, dried cranberries, or a combination

Instructions

  1. Preheat your oven to 375°F (190°C). Spray your muffin tin with non-stick cooking spray or line with paper liners.
  2. In a large bowl, whisk together the pumpkin puree, eggs, maple syrup, milk, and vanilla extract until completely smooth and uniform.
  3. In a separate medium bowl, combine the rolled oats, pumpkin pie spice, baking powder, and salt. Stir with a fork or whisk to distribute evenly.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined. Use a spatula and fold gently; do not overmix.
