Ingredients

Scale
  • 1 ½ cups (150g) graham cracker crumbs or digestive biscuits, finely crushed
  • 2 tbsp instant espresso powder
  • ¼ cup (50g) granulated sugar
  • 6 tbsp (85g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 8 oz (225g) mascarpone cheese, room temperature
  • ¾ cup (150g) granulated sugar
  • 3 large eggs, room temperature
  • 2 tbsp all-purpose flour
  • 2 tbsp strong brewed espresso, cooled
  • 1 tsp vanilla extract
  • 2 tbsp coffee liqueur or Marsala wine (optional)
  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings or curls (optional garnish)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, instant espresso powder, sugar, and melted butter until mixture resembles wet sand. Press firmly into the bottom of the pan. Bake for 10 minutes, then cool slightly.
  3. In a mixer bowl, beat cream cheese and mascarpone until smooth and lump-free, about 3 minutes. Gradually add sugar and beat until incorporated. Add eggs one at a time, beating gently after each. Stir in flour, espresso, vanilla, and coffee liqueur if using. Avoid overmixing.
  4. Pour filling over cooled crust and smooth the top. Bake for 50-60 minutes until edges are set but center jiggles slightly.
  5. Cool cheesecake on a wire rack for about an hour, then refrigerate for at least 4 hours or overnight.
  6. Before serving, dust top with unsweetened cocoa powder and scatter dark chocolate shavings.

Notes

Use room temperature cream cheese, mascarpone, and eggs for smooth batter. Avoid overmixing after adding eggs to prevent cracks. Brew strong espresso or use good quality instant espresso powder for best flavor. Dust cocoa powder with a fine mesh sieve. For neat slices, dip knife in hot water and wipe clean between cuts. Chilling overnight improves texture and flavor.
