  • 2 large eggs, room temperature
  • ½ cup vegetable oil or melted butter
  • ⅓ cup water or coffee
  • 1 pint fresh strawberries, washed and hulled
  • 8 ounces semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil or vegetable oil
  • Optional toppings: chopped nuts, shredded coconut, or sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin pan lightly or line with mini cupcake liners to prevent sticking.
  2. In a medium bowl, mix the brownie mix, eggs, oil (or butter), and water (or coffee) until smooth but don’t overbeat. The batter should be thick but pourable.
  3. Spoon about 1 tablespoon (15 ml) of brownie batter into each mini muffin cup — just enough to cover the bottom (about ½ full).
  4. Place one whole, hulled strawberry into the center of each cup, pressing down gently so it’s partially submerged in the batter.
  5. Spoon additional brownie batter over the strawberries until the cups are about ¾ full, covering the berry completely but leaving a little room at the top for rising.
  6. Bake for 18-22 minutes or until a toothpick inserted near the edge (not the berry) comes out with a few moist crumbs. The brownies should spring back lightly to touch.
  7. Allow the brownie bites to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second bursts, stirring well between each, until smooth and glossy. Alternatively, use a double boiler on low heat.
  9. Using a toothpick or fork, dip each brownie bite into the melted chocolate, coating fully. Let excess chocolate drip off before placing on a parchment-lined tray or wire rack.
  10. While the chocolate is still wet, sprinkle with chopped nuts, shredded coconut, or colorful sprinkles for added texture and visual appeal (optional).
  11. Let the chocolate set at room temperature or chill briefly in the fridge until firm (about 15-20 minutes).
  12. Serve and enjoy. Best eaten within 2 days but can be stored in an airtight container for up to 3 days at room temperature or up to a week refrigerated.
