  • 1214 ounces smoked sausage (beef, pork, kielbasa, andouille, or chicken/turkey)
  • 12 tablespoons olive oil or avocado oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon apple cider vinegar (optional)
  • Salt and black pepper to taste
  • Fresh parsley or chives for garnish (optional)
  • Red pepper flakes for garnish (optional)

Instructions

  1. Remove the smoked sausage from its packaging and pat it dry thoroughly with paper towels. Slice into rounds about 1/4 to 1/2 inch thick (about 1/3 inch is ideal).
  2. In a small bowl, combine 3 tablespoons honey, 2 tablespoons Dijon mustard, 1 tablespoon yellow mustard, 1 tablespoon mayonnaise, 1/2 teaspoon apple cider vinegar, and a pinch of salt. Whisk until smooth. Set aside.
  3. Place a large skillet (preferably cast iron) over medium-high heat. Add 1-2 tablespoons of oil and let it get hot until shimmering.
  4. Add the sausage slices to the pan in a single layer without overcrowding. Cook undisturbed for 2-3 minutes until the bottoms are deeply golden brown and crispy.
  5. Flip each slice and cook for another 2-3 minutes until equally browned and crispy. For extra crispiness, cook 1-2 minutes more, watching carefully.
  6. Transfer the cooked sausage bites to a plate lined with paper towels to drain excess oil. While hot, sprinkle lightly with salt and black pepper.
  7. Arrange the bites on a serving platter with the honey mustard dip in the center. Garnish with fresh parsley or chives if desired. Serve immediately.

Notes

Pat the sausage dry thoroughly for maximum crispiness. Do not overcrowd the pan; cook in batches if needed. Season with salt and pepper after cooking to avoid drawing out moisture. The dip can be made ahead and stored in the refrigerator for up to a week.
