Crispy Oven-Baked Parmesan Garlic Wings

These oven-baked wings achieve a shatter-crisp skin without deep frying, thanks to a secret baking powder trick. Tossed in a rich Parmesan garlic butter, they’re perfect for game day or a cozy night in.

  • 2 pounds (about 900g) chicken wings, separated into drumettes and flats (tips removed or saved for stock)
  • 1 ½ teaspoons baking powder (NOT baking soda)
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 4 tablespoons (½ stick) unsalted butter
  • 45 cloves garlic, minced
  • ½ cup (50g) finely grated Parmesan cheese, plus more for garnish
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Prep the Wings: Pat the chicken wings bone-dry with paper towels. Let them sit on a plate uncovered in the fridge for 30 minutes to an hour if possible. Place a wire rack inside a rimmed baking sheet.
  2. Make the Seasoning Mix: In a small bowl, whisk together the baking powder, salt, black pepper, garlic powder, and smoked paprika.
  3. Coat the Wings: Place the dried wings in a large bowl. Sprinkle the seasoning mix over them and toss with your hands until every wing is evenly coated.
  4. Preheat & Arrange: Preheat oven to 425°F (220°C). Arrange the wings in a single layer on the wire rack, making sure they aren’t touching.
  5. Bake: Bake for 45-50 minutes, flipping the wings halfway through (at the 25-minute mark) with tongs, until deep golden brown and crispy.
  6. Make the Sauce: While the wings bake, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the grated Parmesan cheese until melted and smooth.
  7. Finish & Serve: Let the baked wings rest for 2 minutes. Transfer to a large bowl, pour the warm Parmesan garlic butter over the top, and toss gently until coated. Sprinkle with fresh parsley and extra Parmesan. Serve immediately.

Notes

Pat wings extremely dry for maximum crispiness. Do not substitute baking soda for baking powder. Do not overcrowd the pan; use two trays if needed. Toss wings in sauce just before serving to keep skin crispy. For air fryer: cook at 400°F (200°C) for 20-25 minutes, shaking halfway.
