Crispy Harissa Roasted Chickpeas

A quick and easy spicy snack featuring crispy roasted chickpeas coated in smoky, garlicky North African harissa paste with a hint of citrus.

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 tablespoons harissa paste
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Zest of 1 lemon
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drain and rinse the canned chickpeas thoroughly under cold water. Spread them on a clean kitchen towel or paper towels and pat dry as much as possible.
  3. In a large mixing bowl, combine the harissa paste, olive oil, smoked paprika, garlic powder, sea salt, black pepper, and optional cayenne pepper. Add the lemon zest last.
  4. Add the dried chickpeas to the bowl and gently toss until every chickpea is evenly coated with the harissa mixture.
  5. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the chickpeas out in a single layer.
  6. Roast for 25-30 minutes, shaking the pan or stirring the chickpeas gently halfway through (around 15 minutes) to promote even browning.
  7. Check for crispiness after 30 minutes; if not crispy enough, roast for an additional 5 minutes while watching carefully.
  8. Let the chickpeas cool on the baking sheet for about 10 minutes before serving.

Notes

Pat chickpeas very dry before roasting to ensure maximum crispiness. Stir or shake the pan halfway through roasting to promote even browning. If chickpeas are not crispy enough, roast a few minutes longer or increase oven temperature by 10°F for the last 5 minutes. Store in an airtight container at room temperature for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to revive crispiness.
