  • 2 tablespoons all-purpose flour (or cornstarch for gluten-free option)
  • 2 tablespoons olive oil or vegetable oil (for frying)
  • Freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or chili powder for extra flavor
  • 2 tablespoons honey (local or organic if you prefer)
  • 1 tablespoon sriracha sauce (adjust based on heat preference)
  • 1 teaspoon lime juice (freshly squeezed, for brightness)
  • 1/2 teaspoon soy sauce or tamari (optional, adds umami depth)

Instructions

  1. Slice the halloumi block into sticks about 3 inches (7.5 cm) long and 1/2 inch (1.3 cm) thick. Pat the slices dry with paper towels to remove excess moisture.
  2. In a mixing bowl, toss the halloumi sticks with the 2 tablespoons of flour (or cornstarch). Add freshly ground black pepper and smoked paprika if using.
  3. Heat 2 tablespoons of olive or vegetable oil in a skillet over medium heat until shimmering but not smoking (about 350°F / 175°C).
  4. Carefully add the coated halloumi sticks to the hot oil without crowding the pan. Fry for about 2-3 minutes per side until golden brown and crispy.
  5. Transfer the fries to a plate lined with paper towels to absorb excess oil and let rest for a minute or two.
  6. While frying, mix honey, sriracha, lime juice, and soy sauce in a small bowl until smooth.
  7. Serve the crispy halloumi fries with the spicy honey sriracha dip on the side. Optionally, sprinkle with chopped parsley or chili flakes.

Notes

Pat halloumi dry before coating to ensure crispiness. Avoid overcrowding the pan to maintain oil temperature. Rest fries on paper towels or a wire rack to keep them crispy. For a gluten-free version, use cornstarch instead of flour and tamari instead of soy sauce. Air fryer option: cook at 400°F (200°C) for 10 minutes, flipping halfway.
