A quick and easy recipe for crispy grilled garlic scapes paired with a bright, zesty lemon aioli dip. Perfect as a flavorful snack or side dish with a smoky char and creamy tangy dip.

  • 1 pound fresh garlic scapes, trimmed
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika
  • ½ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 small garlic clove, finely minced or grated
  • ½ teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1 teaspoon honey or maple syrup

Instructions

  1. Rinse the garlic scapes under cold water and pat dry thoroughly. Trim off any tough ends, and cut long stalks in half for easier handling.
  2. Place the scapes in a large bowl. Drizzle with olive oil, sprinkle with salt, pepper, and smoked paprika if using. Toss gently to coat evenly.
  3. Preheat grill to medium-high heat (around 400°F). If using charcoal, wait until coals are covered with white ash.
  4. Lay garlic scapes perpendicular to grill grates. Grill for 3-4 minutes per side, turning carefully with tongs until charred and slightly crisp but not burnt.
  5. While scapes grill, whisk together mayonnaise, lemon juice, lemon zest, minced garlic, Dijon mustard, salt, pepper, and honey if using. Chill until serving.
  6. Transfer grilled garlic scapes to a platter and serve immediately with lemon aioli for dipping.

Notes

Pat garlic scapes very dry before oiling to avoid steaming and loss of crispness. Use tongs to turn scapes gently once or twice to maintain texture. If scapes char too quickly, reduce heat or move to cooler grill area. Aioli can be made ahead and chilled. Leftovers keep refrigerated up to 2 days; reheat gently to restore crispness.
