Instructions

  1. Grate the zucchini using a box grater or food processor to yield about 3 cups grated. Place in a clean kitchen towel and squeeze out as much liquid as possible.
  2. In a medium bowl, combine grated zucchini, Parmesan, eggs, breadcrumbs, salt, and pepper. Stir until fully combined. Add more breadcrumbs if mixture is too wet.
  3. Scoop about 2 tablespoons of mixture and shape into small patties about 2-3 inches in diameter.
  4. Preheat air fryer to 375°F (190°C) for 3-5 minutes.
  5. Lightly spray air fryer basket with oil. Place fritters in a single layer without overcrowding. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve immediately warm with a squeeze of lemon or your favorite dipping sauce.

Notes

Squeeze out as much moisture from the zucchini as possible to avoid soggy fritters. Use finely grated Parmesan for better melting and flavor. Lightly spray the air fryer basket with oil to prevent sticking. If fritters brown too quickly, reduce temperature by 10-15°F and cook longer.
