  • 2 to 3 tablespoons (3045 ml) raw or wildflower honey
  • 1 tablespoon (about 34 sprigs) fresh thyme, finely chopped
  • 1 loaf baguette or rustic bread, sliced about ½ inch thick
  • 2 tablespoons (30 ml) extra virgin olive oil
  • Pinch of flaky sea salt
  • Freshly ground black pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) or heat a cast-iron skillet over medium heat.
  2. Slice the baguette into ½-inch thick pieces. Brush each slice lightly with olive oil on both sides.
  3. Toast the bread slices on a baking sheet for 8-10 minutes, flipping halfway, or toast in the skillet for 3-4 minutes per side until golden and crispy.
  4. In a mixing bowl, whip the ricotta cheese with a hand or stand mixer on medium-high speed for 2-3 minutes until smooth and fluffy.
  5. Gently fold in 2 tablespoons honey and 1 tablespoon chopped fresh thyme, preserving the whipped texture. Add more honey if desired.
  6. Season the ricotta mixture with a pinch of flaky sea salt and a light sprinkle of freshly ground black pepper, folding gently.
  7. Spread a generous layer of the whipped ricotta mixture on each toasted bread slice.
  8. Drizzle a little extra honey on top and sprinkle a few extra thyme leaves.
  9. Serve immediately, optionally adding a tiny drizzle of olive oil over the top.

Notes

Drain ricotta if watery before whipping to avoid runny texture. Use fresh thyme for best flavor; dried thyme can be used in smaller amounts. Toast bread just before serving to keep it crisp. Whipping ricotta is key to achieving a light, fluffy texture. Drizzle honey carefully to avoid overpowering the flavors.
