  • 1 cup (225g) small-curd, full-fat cottage cheese
  • 2 tablespoons (30ml) heavy cream
  • 1 to 2 teaspoons everything bagel seasoning
  • 1 teaspoon (5ml) fresh lemon juice
  • 1 tablespoon finely chopped fresh chives (optional)
  • 2 slices of your favorite bread (sourdough or rustic country loaf recommended), toasted
  • Extra virgin olive oil, for drizzling
  • Salt and pepper, to taste

Instructions

  1. Toast 2 slices of your favorite bread until golden and crisp (about 3-4 minutes in a toaster or 5-6 minutes in a 375°F/190°C oven).
  2. Place 1 cup (225g) small-curd cottage cheese in a medium bowl. Add 2 tablespoons (30ml) heavy cream and 1 teaspoon (5ml) fresh lemon juice.
  3. Using an electric mixer or hand whisk, whip the mixture until smooth and airy, about 2-3 minutes on medium speed.
  4. Gently fold in 1 tablespoon finely chopped fresh chives (if using) and 1 to 2 teaspoons everything bagel seasoning. Adjust salt and pepper to taste.
  5. Spread the whipped cottage cheese evenly over the warm toast using a spoon or spatula.
  6. Drizzle a little extra virgin olive oil on top for extra flavor and a glossy finish.
  7. Optionally, garnish with additional fresh chives or cracked black pepper before serving.

Notes

Use small-curd cottage cheese for best texture. Keep dairy ingredients cold before whipping. Drain cottage cheese if too watery. Warm toast slightly melts the whipped cheese for a luscious mouthfeel.
