  • 15.25 oz canned whole kernel corn, drained (reserve a little liquid)
  • 14.75 oz canned creamed corn
  • 8 oz sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Lightly grease the inside of a 4 to 6-quart slow cooker with non-stick spray or softened butter.
  2. In a large mixing bowl, whisk together the eggs, melted butter, and sour cream until smooth.
  3. Stir in the drained whole kernel corn and creamed corn.
  4. Add the Jiffy corn muffin mix, sugar, salt, and black pepper. Gently fold to combine without overmixing.
  5. Pour the mixture into the prepared slow cooker and level the top lightly with a spatula.
  6. Cover and cook on low for 3 to 4 hours. Check at 3 hours by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs.
  7. If too wet at 3 hours, uncover and cook an additional 15-30 minutes to evaporate moisture.
  8. Turn off the slow cooker and let the casserole sit covered for 10 minutes to set.
  9. Serve warm, scooping out portions with a large spoon.
