  • 1 pound ground beef (80/20, preferably grass-fed)
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 4 medium russet potatoes (about 2 pounds), peeled and diced into bite-sized cubes
  • 4 cups beef broth (low-sodium preferred)
  • 1 cup whole milk (or 2%)
  • 4 ounces cream cheese, softened
  • 1 ½ cups shredded sharp cheddar cheese (about 6 ounces)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional toppings: crisp bacon bits, sliced green onions, extra shredded cheese

Instructions

  1. Heat a skillet over medium-high heat and add the ground beef. Cook, breaking it apart with a spatula, until no longer pink and nicely browned, about 6-8 minutes. Drain excess fat, then transfer beef to the slow cooker.
  2. In the same skillet, add a splash of oil if needed. Toss in diced onions and cook until softened and translucent, about 4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant. Transfer to slow cooker.
  3. Add the diced russet potatoes, beef broth, Worcestershire sauce, and Dijon mustard to the slow cooker. Stir gently to combine all ingredients.
  4. Cover and cook on low for 5-6 hours, or on high for 3-4 hours, until potatoes are tender but not falling apart.
  5. About 30 minutes before serving, stir in the softened cream cheese and milk. Mix well until cream cheese melts completely, creating a silky texture.
  6. Stir in shredded cheddar cheese until melted. Taste and season with salt and pepper as needed.
  7. Ladle soup into bowls and top with optional crispy bacon bits or sliced green onions.

Notes

Brown the ground beef before adding to the slow cooker to enhance flavor. Use softened cream cheese at room temperature for smooth blending. If soup is too thick, thin with additional broth or milk. Cut potatoes into uniform chunks and stir halfway through cooking if possible. For dairy-free, substitute cream cheese with vegan alternative and milk with almond milk. For low-carb, swap potatoes for cauliflower florets.
