  • 1 cup (240 ml) apple cider, preferably fresh or naturally spiced
  • 1 cup (240 ml) oat milk, barista-style recommended
  • 1 shot (30 ml) strong brewed espresso or coffee
  • 2 tablespoons packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons salted caramel sauce (homemade or store-bought)
  • Pinch of sea salt
  • Optional: pinch of ground cloves
  • Optional: maple syrup (can substitute brown sugar)

Instructions

  1. Warm the apple cider in a small saucepan over medium heat. Add cinnamon, nutmeg, and optional cloves. Heat for about 5 minutes until steaming but not boiling.
  2. Stir in brown sugar and vanilla extract until sugar dissolves. Adjust sweetness to taste.
  3. Brew 1 shot (30 ml) of espresso or strong coffee and pour into serving mug or latte glass.
  4. If making homemade salted caramel, melt 1/4 cup (50 g) sugar in a dry pan over medium heat until amber. Add 2 tablespoons (30 g) unsalted butter and 1/4 cup (60 ml) heavy cream or oat cream, stirring until smooth. Stir in a pinch of sea salt and let cool slightly.
  5. Warm oat milk until hot but not boiling (around 140°F/60°C). Froth using a milk frother or whisk vigorously until foamy.
  6. Pour warm spiced apple cider into the mug with espresso. Add salted caramel sauce and stir gently.
  7. Slowly pour frothed oat milk on top, holding back foam with a spoon, then spoon foam over the latte.
  8. Sprinkle a tiny pinch of sea salt on top for a salted caramel finish.
  9. Serve immediately and enjoy warm.

Notes

If caramel stiffens in the fridge, warm gently before use. Avoid overheating oat milk to prevent curdling; aim for about 140°F (60°C). Frothing can be done by shaking warm oat milk in a jar if no frother is available. Adjust spices carefully to avoid bitterness. Homemade salted caramel keeps up to 2 weeks refrigerated.
