A creamy, rich dip made by roasting garlic scapes and garlic bulbs, blended with white beans for a smooth, flavorful spread perfect for snacks or entertaining.

  • 1012 garlic scapes (about 6 ounces)
  • 1 large whole garlic bulb
  • 1 can (15 oz / 425 g) white beans (cannellini or great northern), drained and rinsed
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Trim tough ends off garlic scapes and place on a baking sheet.
  2. Cut the top off the garlic bulb to expose cloves, drizzle with a little olive oil, wrap loosely in foil, and place alongside the scapes.
  3. Roast for 20-25 minutes until scapes are tender and garlic cloves are golden and soft.
  4. While roasting, drain and rinse white beans thoroughly and set aside.
  5. Once roasted garlic scapes and bulbs have cooled slightly, squeeze softened garlic cloves from the bulb into a food processor.
  6. Add roasted scapes, white beans, olive oil, lemon juice, and thyme (if using). Blend until smooth and creamy, about 1-2 minutes, scraping sides as needed.
  7. Season with salt and freshly ground black pepper to taste. If too thick, add a teaspoon of water or more olive oil and blend again.
  8. Transfer dip to a serving bowl and chill for at least 20 minutes before serving.

Notes

Do not skip draining the beans well to avoid a runny dip. Roasting garlic scapes mellows their flavor and creates a creamy texture. If dip is grainy, blend longer or add a splash of water. For variations, add cayenne for spice or swap thyme for other herbs like basil or rosemary.
