A rich and comforting one-pan chicken dish with a buttery garlic sauce, sun-dried tomatoes, and fresh spinach, perfect for quick and easy weeknight dinners.

  • 1 to 1.5 pounds boneless, skinless chicken breasts
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning. Let sit while heating the pan.
  2. Heat a large skillet over medium heat. Add olive oil and butter; melt and foam without browning, about 1-2 minutes.
  3. Sear chicken breasts in the skillet for about 5 minutes per side until golden brown. Remove and set aside.
  4. In the same pan, sauté minced garlic and chopped sun-dried tomatoes for about 1 minute until fragrant.
  5. Add chicken broth and heavy cream to the pan. Stir and scrape browned bits off the bottom. Simmer gently for 2-3 minutes to thicken.
  6. Stir in grated Parmesan cheese until melted and sauce thickens. Adjust seasoning with salt and pepper.
  7. Return chicken breasts to the pan, spoon sauce over them, reduce heat to low, cover, and simmer for 8-10 minutes until chicken reaches 165°F (74°C).
  8. Remove lid, add fresh spinach, and stir gently. Cook uncovered for 2-3 minutes until spinach wilts.
  9. Optionally sprinkle crushed red pepper flakes for heat. Serve immediately with sauce spooned over chicken.

Notes

Use a meat thermometer to ensure chicken is cooked to 165°F (74°C). If sauce is too thick, add more broth or cream to loosen. For dairy-free, substitute heavy cream with coconut cream and butter with plant-based alternatives. For lighter versions, use half-and-half or milk with Greek yogurt added off heat. Use gluten-free chicken broth to keep recipe gluten-free.
