A quick and easy creamy chicken dish with sun-dried tomato sauce and pasta, perfect for comforting weeknight dinners or impressing guests with minimal effort.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g), pounded to even thickness
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup (240 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • 8 oz (225 g) pasta of choice (fettuccine or penne recommended)

Instructions

  1. Pat dry the chicken breasts and season both sides generously with salt and black pepper. Pound to an even thickness about 1/2 inch (1.3 cm).
  2. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente (8-10 minutes). Drain and reserve 1/2 cup pasta water.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook 4 minutes per side until golden and cooked through (165°F internal temperature). Remove and keep warm.
  4. Lower heat to medium. In the same skillet, sauté garlic and sun-dried tomatoes for about 2 minutes until fragrant.
  5. Add chicken broth, scraping browned bits from the pan. Stir in heavy cream, Italian seasoning, and red pepper flakes if using. Simmer gently for 3-4 minutes until slightly thickened.
  6. Stir in Parmesan cheese until melted and smooth. Adjust salt and pepper to taste. Add chopped fresh basil.
  7. Return chicken to skillet, spoon sauce over to coat. Add cooked pasta and toss gently. Loosen sauce with reserved pasta water if too thick.
  8. Serve immediately, garnished with extra basil or Parmesan if desired.

Notes

If sauce separates or curdles, add a splash of reserved pasta water and stir gently to bring it back. Do not rush searing chicken to lock in juices. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Gluten-free pasta can be used as needed. Leftovers keep well refrigerated for up to 3 days; reheat gently with added broth or cream to restore sauce texture.
