Ingredients

Scale
  • 1 cup (240 ml) cold brew or strong coffee, chilled
  • 1/2 cup (120 ml) milk (whole milk for creaminess, or almond/oat milk for dairy-free)
  • 2 tablespoons (30 grams) pumpkin puree (not pumpkin pie filling)
  • 1 to 2 tablespoons (1530 ml) maple syrup or honey, to taste
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1 teaspoon (2 grams) pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • Pinch of salt
  • Ice cubes as needed

Instructions

  1. Prepare your coffee: Brew a strong cup of coffee or use chilled cold brew. Pour 1 cup (240 ml) into your serving glass filled with ice cubes.
  2. Make the pumpkin spice cold foam: In a blender, combine 1/2 cup (120 ml) milk, 2 tablespoons (30 grams) pumpkin puree, 1 to 2 tablespoons (15-30 ml) maple syrup or honey, 1/2 teaspoon (2.5 ml) vanilla extract, 1 teaspoon (2 grams) pumpkin pie spice, and a pinch of salt. Blend on high speed for 30 to 45 seconds until frothy and slightly thickened.
  3. Check the foam consistency: If too thin, blend longer or add more milk; if too thick, add a teaspoon of water or milk to loosen slightly.
  4. Top your coffee: Gently spoon or pour the pumpkin spice cold foam over the iced coffee to create a layered look.
  5. Optional garnish: Sprinkle a pinch of cinnamon or extra pumpkin pie spice on top.
  6. Serve immediately with a straw or spoon to enjoy the creamy foam with every sip.

Notes

Use whole milk for the creamiest foam or oat milk for a dairy-free option. Chill milk beforehand for better froth. Avoid canned pumpkin pie filling as it contains added sugar and spices. Foam can be stored in the fridge up to 24 hours; whisk before serving. Pour foam slowly over iced coffee for best layering.
