Creamy Crockpot Chicken Tortilla Soup Recipe with Easy Avocado Lime Crema

A comforting and creamy slow cooker chicken tortilla soup with a fresh avocado lime crema topping, perfect for busy evenings or cozy family dinners.

  • 2 large boneless, skinless chicken breasts (or thighs for juicier meat)
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn, drained
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • Salt and pepper to taste (about 1 tsp salt and ½ tsp pepper)
  • ½ cup sour cream or Greek yogurt
  • Crushed tortilla chips for serving (optional)
  • For the avocado lime crema:
  • 1 ripe avocado, peeled and pitted
  • ½ cup sour cream or Greek yogurt
  • Juice of 1 lime (about 2 tbsp)
  • 1 small garlic clove, minced
  • Salt to taste

Instructions

  1. Dice one medium onion and mince the garlic cloves. Toss these into the crockpot.
  2. Place the chicken breasts into the crockpot. Pour in 4 cups of low-sodium chicken broth and one 14.5 oz can of diced tomatoes with green chilies.
  3. Sprinkle 1 tsp cumin, 1 tsp chili powder, ½ tsp smoked paprika, ½ tsp dried oregano, and salt and pepper over the top. Do not stir.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the crockpot.
  6. Drain and rinse one 15 oz can of black beans and add to the pot along with 1 cup frozen or canned corn. Stir to combine.
  7. Stir in ½ cup sour cream or Greek yogurt. Taste and adjust salt and pepper as needed. Let warm for another 15-20 minutes on low.
  8. Make the avocado lime crema by blending one ripe avocado, ½ cup sour cream or Greek yogurt, juice of one lime, 1 small minced garlic clove, and a pinch of salt until smooth. Add water or lime juice if too thick.
  9. Ladle soup into bowls. Top with a dollop of avocado lime crema and crushed tortilla chips. Optionally add fresh cilantro or extra lime juice.

Notes

Rinse beans to reduce sodium and canned flavor. Add sour cream or Greek yogurt at the end to prevent curdling. Use chicken thighs for juicier meat. Crushed tortilla chips add essential crunch. For stovetop, simmer about 1 hour. Avocado lime crema can be mashed if no blender is available.
