This creamy crockpot buffalo chicken dip with blue cheese is the ultimate party appetizer with just 5 minutes of prep. It’s spicy, tangy, and unbelievably creamy, perfect for game days, potlucks, or any gathering.

  • 3 cups cooked chicken, shredded (about 1.5 pounds)
  • 16 ounces cream cheese, softened
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crumbled blue cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and shred meat with two forks. You need about 3 cups. If cooking your own, poach two boneless, skinless breasts in simmering water for 15 minutes, then shred.
  2. Soften the cream cheese: Cut cream cheese into cubes to help it melt evenly. If forgotten, microwave in 15-second bursts until soft.
  3. Layer everything in the crockpot: Start with cubed cream cheese on the bottom. Add shredded chicken, then pour Frank’s RedHot evenly over the chicken. Drizzle ranch dressing on top. Sprinkle garlic powder and onion powder. Add butter cut into small pieces on top.
  4. Cook on LOW for 2 hours. Do not use HIGH. After about an hour, give it a quick stir.
  5. After 2 hours, stir in shredded sharp cheddar and half of the crumbled blue cheese until melted and smooth.
  6. Cover and cook on LOW for another 20 to 30 minutes.
  7. Taste and adjust seasoning with salt, pepper, or extra hot sauce if desired.
  8. Switch slow cooker to WARM setting. Sprinkle remaining blue cheese on top. Serve straight from the crockpot with chips, veggies, or bread.

Notes

For best results, use softened cream cheese and shred chicken while warm. Cook on LOW to prevent dairy from separating. Dip can be made ahead and reheated. For a thinner dip, cook uncovered on LOW for extra 15-20 minutes. For thicker dip, stir in a splash of milk or chicken broth.
