Instructions

  1. Rinse the cabbage under cold water and dry thoroughly using a salad spinner or clean towel. Remove the core and shred the cabbage finely using a mandoline or sharp knife.
  2. Peel and shred the carrot. Finely dice the red onion if using. Place all the vegetables in a large mixing bowl.
  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, granulated sugar, Dijon mustard, celery seed, salt, and pepper until smooth. Taste and adjust seasoning if needed.
  4. Pour the dressing over the shredded vegetables. Toss gently but thoroughly with tongs or two large forks to coat evenly.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld and cabbage to soften slightly while retaining crunch.
