  • 3 cups chicken broth (plus 2 additional cups for later)
  • 2 tablespoons unsalted butter
  • 1 yellow onion, finely diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 8 ounces cremini and shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup small-curd cottage cheese
  • 1 cup whole or 2% milk (reduce to 3/4 cup for thicker soup)
  • 1 teaspoon fresh thyme leaves
  • Pinch of freshly grated nutmeg
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Rinse 1 cup of wild rice blend under cold water. Add to 3 cups of chicken broth in a large pot and bring to a boil. Reduce heat to low, cover, and simmer for 40-45 minutes until rice is tender but chewy. Stir occasionally and add water if needed.
  2. While rice cooks, melt 2 tablespoons butter in a skillet over medium heat. Add diced onion, celery, and carrots. Cook for 7-8 minutes until softened, stirring occasionally.
  3. Add sliced mushrooms to the skillet and cook for 5 minutes until they release moisture and begin to brown.
  4. Add minced garlic and cook for 1 minute until fragrant. Season lightly with salt and pepper.
  5. Add diced chicken to the skillet and cook for about 5 minutes until no longer pink on the outside.
  6. Transfer the chicken and vegetable mixture to the pot with the wild rice and broth. Add 2 more cups of chicken broth and bring to a gentle simmer. Cook uncovered for 10-15 minutes, stirring occasionally.
  7. Blend 1 cup cottage cheese with 1 cup milk until smooth.
  8. Slowly stir the cottage cheese mixture into the soup. Heat gently on low for 5 minutes, stirring often. Do not boil.
  9. Add fresh thyme, nutmeg, and adjust salt and pepper to taste.
  10. Ladle soup into bowls and garnish with chopped fresh parsley.

Notes

Cook wild rice low and slow to avoid mushy texture. Blend cottage cheese smoothly to prevent lumps. Do not boil soup after adding dairy to avoid curdling. Soup reheats well and can be made ahead.
