Instructions

  1. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk (2 cups / 480 ml) until smooth and thickened, about 2 minutes. Let it set in the fridge for 5 minutes to firm up slightly.
  2. While pudding rests, whip 1 cup (240 ml) of cold heavy cream with 1 teaspoon vanilla extract and 2 tablespoons sugar (if using) until soft peaks form, about 3-5 minutes with an electric mixer.
  3. Gently fold the whipped cream into the pudding until fully combined and smooth to create an ultra-creamy texture.
  4. Peel and slice 3 ripe bananas into 1/4-inch (0.6 cm) thick rounds. Set aside.
  5. Lightly crush about 20 Chessmen cookies by placing them in a zip-top bag and pressing gently with a rolling pin to create chunks, not crumbs.
  6. Start by spreading a thin layer of the creamy pudding mixture on the bottom of a 9×9-inch glass dish or similar-sized trifle bowl.
  7. Sprinkle a layer of crushed Chessmen cookies over the pudding, followed by a layer of banana slices. Repeat layering until all ingredients are used, finishing with a pudding layer on top.
  8. Cover the dish with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow cookies to soften and flavors to meld.
