  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 lbs (about 4 medium) Russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups (960ml) beef broth (low-sodium preferred)
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) heavy cream
  • 2 cups (200g) sharp cheddar cheese, freshly shredded
  • ½ cup (60g) dill pickles, finely chopped
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons ketchup
  • Salt and black pepper to taste
  • Optional toppings: extra shredded cheddar, crumbled cooked bacon, sliced green onions, extra diced pickles, ketchup, mustard

Instructions

  1. Brown the Beef: Place a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook, breaking it apart, until well browned (6-8 minutes). Transfer beef to a plate, leaving about 2 tablespoons of rendered fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add diced onion and cook until softened (4-5 minutes), scraping up browned bits. Add minced garlic and cook 30 seconds until fragrant.
  3. Add Potatoes and Broth: Add diced potatoes and beef broth. Increase heat to high and bring to a boil.
  4. Simmer Potatoes: Reduce heat to low, cover, and simmer 15-20 minutes until potatoes are fork-tender.
  5. Mash for Creaminess: Remove pot from heat. Using a potato masher or fork, gently mash about half the potatoes in the pot.
  6. Add Dairy and Seasonings: Return pot to low heat. Stir in milk and heavy cream. Gradually add shredded cheddar, stirring constantly until melted. Stir in chopped pickles, mustard, Worcestershire sauce, and ketchup.
  7. Return Beef and Simmer: Add browned beef back to pot. Simmer gently 5-10 minutes, stirring occasionally, until thickened. Season with salt and pepper to taste.
  8. Serve Immediately: Ladle into bowls and top with desired toppings. Serve hot with crusty bread or crackers.

Notes

Shred your own cheese for smooth melting. Keep heat low when adding cheese to prevent graininess. Soup thickens as it cools; add milk or broth when reheating. For a thicker soup, mash more potatoes or use a cornstarch slurry.
