A creamy, spicy buffalo chicken dip with a tangy blue cheese swirl, perfect for game day or casual gatherings. This easy recipe combines shredded rotisserie chicken, cream cheese, buffalo sauce, and a signature blue cheese swirl for a crowd-pleasing appetizer.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 400 grams, rotisserie recommended)
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (120 ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • ½ cup (75 g) blue cheese crumbles (good quality like Maytag)
  • ½ cup (120 ml) ranch dressing
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Freshly ground black pepper, to taste
  • Optional: chopped green onions or chives for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine softened cream cheese and buffalo sauce in a large mixing bowl. Beat with an electric mixer or sturdy spoon until smooth and creamy, about 2-3 minutes.
  3. Add ranch dressing, garlic powder, onion powder, and black pepper. Mix gently to combine.
  4. Fold in shredded chicken and shredded cheddar cheese until evenly distributed.
  5. Transfer the mixture to a prepared 8×8-inch baking dish and spread evenly.
  6. Scatter blue cheese crumbles over the top. Using the back of a spoon or butter knife, gently swirl the blue cheese into the dip to create pockets of flavor.
  7. Bake uncovered for 20-25 minutes until edges bubble and top is lightly golden.
  8. Remove from oven and let sit for 5 minutes before serving.

Notes

If cream cheese is too cold, warm it in the microwave for 15-20 seconds to avoid lumps. Use shredded rotisserie chicken for best texture. For a smokier flavor, add a dash of smoked paprika before baking. Keep an eye on the dip during baking to avoid overbrowning. Leftovers keep well refrigerated for up to 3 days and reheat gently.
