  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (120ml) buffalo hot sauce (Frank’s RedHot recommended)
  • 1/2 cup (120ml) ranch dressing (or blue cheese dressing as a substitute)
  • 1 cup (115g) shredded cheddar cheese
  • 1/2 cup (55g) shredded mozzarella cheese
  • 1 teaspoon minced garlic
  • 2 green onions, thinly sliced
  • Salt and black pepper to taste
  • Optional: diced celery for crunch
  • Optional: blue cheese crumbles for extra flavor

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by shredding about 2 cups (280g) of cooked chicken. Rotisserie chicken is recommended for convenience.
  3. Soften the cream cheese by leaving it at room temperature for 20-30 minutes or microwaving briefly (about 15 seconds).
  4. In a medium bowl, combine the softened cream cheese, buffalo hot sauce, and ranch dressing. Blend until smooth and creamy with no lumps.
  5. Stir in the shredded chicken, minced garlic, and half of the shredded cheddar and mozzarella cheeses. Season lightly with salt and pepper. The mixture should be thick but spreadable.
  6. Spoon the dip into a 10-inch cast iron skillet and spread evenly. Sprinkle the remaining cheese on top.
  7. Bake uncovered for 20-25 minutes until the cheese is bubbling and edges are lightly browned.
  8. Remove from oven and let cool slightly. Garnish with sliced green onions and optional blue cheese crumbles or diced celery.
  9. Serve warm with tortilla chips, sliced baguette, or crunchy veggies.
