Cozy Triple Berry Crumble Bars

  • 1 ½ cups old-fashioned rolled oats
  • 1 ½ cups all-purpose flour (or almond flour for gluten-free)
  • ¾ cup light brown sugar, packed
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon (optional)
  • ½ teaspoon fine sea salt
  • ¾ cup unsalted butter, cold and cubed
  • 2 cups fresh or frozen mixed berries (blueberries, raspberries, blackberries)
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease or line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine oats, flour, brown sugar, baking powder, cinnamon, and salt. Add cold cubed butter and cut it into the mixture using a pastry cutter or fingers until coarse crumbs form.
  3. Press half of the oat mixture firmly into the bottom of the prepared pan to form an even layer. Bake for 12-15 minutes until lightly golden.
  4. While the crust bakes, mix berries, granulated sugar, cornstarch, lemon juice, and vanilla extract in a medium bowl until berries are coated but not smashed.
  5. Remove the crust from the oven and spread the berry filling evenly over it.
  6. Crumble the remaining oat mixture over the berry filling, covering as much as possible but leaving some berry peeks.
  7. Bake for 35-40 minutes until the topping is golden brown and the filling is bubbly. Tent with foil if topping browns too quickly.
  8. Cool completely on a wire rack for at least 1 hour to let the filling set.
  9. Use the parchment paper sling to lift bars out of the pan and cut into squares or rectangles. Store leftovers covered in the fridge.

Notes

Keep butter cold to ensure a flaky crust. Do not overmix the berry filling to keep some berries whole. Press crust firmly before prebaking to avoid crumbling when slicing. Tent with foil if topping browns too fast. Cool bars completely before cutting to prevent filling from running. Frozen berries can be used without thawing. Substitute cornstarch with arrowroot or tapioca starch if needed. Add chopped nuts to crumble topping for extra crunch.
