Ingredients

Scale
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream, room temperature
  • 1 teaspoon flaky sea salt, plus more for finishing
  • 1 teaspoon vanilla extract
  • 6 medium apples, peeled and sliced (about 1/4 inch thick; Honeycrisp or Granny Smith recommended)
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup packed brown sugar (light or dark)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and slightly cooled

Instructions

  1. Make the salted caramel sauce: Place granulated sugar in a medium saucepan over medium heat. Let it melt without stirring for 3-4 minutes until edges turn golden. Gently swirl the pan until sugar is completely melted and turns a deep amber color. Add butter pieces (mixture will bubble vigorously) and whisk until fully melted and incorporated, about 1 minute. Slowly drizzle in heavy cream while whisking constantly until smooth and glossy. Remove from heat and stir in flaky sea salt and vanilla ex…
  2. Preheat oven to 350°F (175°C). Peel and slice apples into 1/4-inch thick slices. Place in a large mixing bowl. Add 1/4 cup granulated sugar, 2 tablespoons all-purpose flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and lemon juice. Toss until apples are evenly coated.
  3. Pour apple mixture into a greased 9×13-inch baking dish and spread into an even layer. Drizzle about half of the salted caramel sauce over the apples (reserve the rest for serving). Gently fold the caramel into the apples with a spatula.
  4. Make the oat crumble topping: In a medium mixing bowl, combine rolled oats, 1/2 cup all-purpose flour, almond flour, brown sugar, 1/2 teaspoon cinnamon, and salt. Stir with a fork. Pour melted butter over dry ingredients and mix with a fork or your hands until the mixture forms clumps (some larger, some smaller).
  5. Sprinkle the oat crumble evenly over the apple filling. Place the baking dish on a rimmed baking sheet. Bake at 350°F for 35-40 minutes, or until topping is golden brown and apple filling is bubbling around the edges. If topping browns too quickly, tent loosely with foil for the last 10 minutes. Let cool on a wire rack for at least 10 minutes before serving.
  6. Serve warm: Spoon into bowls, drizzle with remaining salted caramel sauce, and sprinkle with extra flaky sea salt. Top with vanilla ice cream or whipped cream if desired.

Notes

For best results, use a mix of Honeycrisp and Granny Smith apples. Make sure heavy cream is at room temperature to prevent caramel from seizing. The caramel can be made up to a week ahead and stored in the fridge. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, use vegan butter and coconut cream.
