  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk (or milk + 1 tsp white vinegar)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners and set aside.
  2. In a medium bowl, whisk together the sifted all-purpose flour, baking powder, baking soda, cinnamon, cardamom, ginger, cloves, and salt.
  3. In a large bowl, use an electric mixer on medium speed to combine the granulated sugar, brown sugar, and vegetable oil until smooth and slightly thickened, about 1-2 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  5. Add the pumpkin puree and buttermilk to the wet mixture and blend until just combined.
  6. Gradually add the dry ingredients to the wet mixture, folding gently with a rubber spatula or mixing on low speed. Avoid overmixing.
  7. Use a large spoon or ice cream scoop to fill each lined muffin cup about ⅔ full.
