  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon

  • 3 medium ripe bananas, mashed (about 1 ½ cups)
  • 1 cup (245g) pumpkin puree
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • For the cinnamon brown butter glaze:
  • ¼ cup (57g) unsalted butter, browned
  • 1 cup (120g) powdered sugar, sifted
  • 1 teaspoon ground cinnamon
  • 23 tablespoons (30-45ml) milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan lightly with butter or nonstick spray and set aside.
  2. In a large mixing bowl, whisk together the flour, baking soda, ground cinnamon, ground nutmeg, and salt until no lumps remain.
  3. In the same bowl, mash the ripe bananas until smooth but slightly chunky. Stir in the pumpkin puree, brown sugar, eggs, vegetable oil, and vanilla extract until just combined.
  4. Gradually fold the dry ingredients into the wet ingredients using a wooden spoon or spatula until just combined. The batter should be thick but spreadable.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the center of the oven for 55-65 minutes. Start checking at 55 minutes by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs.
  7. Remove the loaf from the oven and let it cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before glazing.
  8. To make the glaze, melt the butter in a small saucepan over medium heat, swirling gently until it foams and turns golden brown with a nutty aroma (about 4-5 minutes). Remove from heat immediately.
  9. In a small bowl, whisk together the browned butter, powdered sugar, ground cinnamon, and 2 tablespoons of milk. Add more milk a teaspoon at a time if the glaze is too thick, until smooth and pourable.
  10. Once the bread is completely cool, drizzle the cinnamon brown butter glaze over the top and let it set for about 10 minutes before slicing.

Notes

Do not overmix the batter to avoid a dense texture. Use very ripe bananas for natural sweetness and moisture. Watch the brown butter closely to prevent burning. Cool the bread completely before glazing to avoid melting the glaze. The glaze can be warmed gently if it hardens too fast while drizzling.
