  • 1/3 cup (113g) honey
  • 1/4 cup (60ml) low-sodium soy sauce
  • 6 cloves garlic, minced
  • 1/4 cup (60ml) low-sodium chicken broth
  • 2 tablespoons (30g) tomato paste
  • 1 tablespoon (15ml) rice vinegar
  • 1 tablespoon (8g) cornstarch
  • 2 tablespoons (30ml) cold water
  • 1 teaspoon (5ml) sesame oil
  • Salt and pepper to taste
  • Sliced green onions for garnish
  • Toasted sesame seeds for garnish

Instructions

  1. In a small mixing bowl, whisk together the honey, soy sauce, minced garlic, chicken broth, tomato paste, and rice vinegar until smooth.
  2. Pat the chicken thighs dry with paper towels. Season both sides lightly with salt and pepper.
  3. Place the chicken thighs in the bottom of a 6-quart crockpot in a single layer. Pour the prepared sauce evenly over the chicken.
  4. Cover the crockpot and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken reaches an internal temperature of 165°F (74°C) and shreds easily with a fork.
  5. Use tongs to transfer the chicken to a plate and tent loosely with foil. Pour the liquid from the crockpot into a small saucepan.
  6. Whisk the cornstarch with cold water to make a slurry. Add to the saucepan and bring to a simmer over medium heat. Stir constantly for 2-3 minutes until the sauce thickens to a glossy, syrupy consistency.
  7. Return the chicken to the crockpot or a serving dish. Pour the thickened sauce over the top. Drizzle with sesame oil, then garnish with sliced green onions and toasted sesame seeds. Serve immediately over steamed rice or with crusty bread.

Notes

For best results, use fresh garlic and low-sodium soy sauce. The sauce will be thin before thickening; do not skip the cornstarch slurry step. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
