  • Zest of 1 lemon
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • ½ cup chicken stock or white wine

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine softened unsalted butter, minced garlic, chopped rosemary, thyme, parsley, lemon zest, salt, and pepper until well blended into a creamy paste.
  3. Pat the turkey breast dry with paper towels.
  4. Gently loosen the skin of the turkey breast by sliding fingers or a spoon under it, being careful not to tear.
  5. Spread about two-thirds of the herb butter evenly under the skin, covering as much meat as possible. Rub the remaining butter on top of the skin.
  6. Lightly brush the turkey skin with olive oil and sprinkle an additional pinch of salt and pepper.
  7. Place the turkey breast skin-side up in a roasting pan. Pour chicken stock or white wine into the pan.
  8. Roast for 50-60 minutes, or until the internal temperature reaches 160°F (71°C), checking with a meat thermometer inserted into the thickest part.
  9. If the skin browns too quickly, loosely tent the turkey with aluminum foil.
  10. Remove from oven and let rest for 10-15 minutes to allow juices to redistribute.
  11. Slice the turkey breast into ½-inch thick slices and serve immediately.

Use a meat thermometer to avoid overcooking; let the turkey rest before slicing for juicy meat. If skin browns too fast, tent with foil. Fresh herbs release more aroma.
