  • 4 bone-in pork chops, about 1-inch thick
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 1 cup apple cider (unfiltered preferred)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 sprig fresh rosemary (or 1/2 teaspoon dried)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the pork chops dry with paper towels. Let them sit at room temperature for 10-15 minutes.
  2. In a shallow bowl, whisk together flour, garlic powder, onion powder, smoked paprika, dried thyme, salt, and black pepper.
  3. Dredge each pork chop in the seasoned flour, coating both sides evenly. Shake off excess and let rest for 5 minutes.
  4. Heat a large cast iron skillet over medium-high heat. Add 2 tablespoons butter and 2 tablespoons olive oil until sizzling.
  5. Sear the pork chops for 4-5 minutes on the first side without moving them, until golden brown.
  6. Flip the pork chops and cook for another 3-4 minutes, until internal temperature reaches 145°F.
  7. Transfer pork chops to a plate and tent loosely with foil. Let rest while making the glaze.
  8. In the same skillet, add apple cider, apple cider vinegar, brown sugar, Dijon mustard, and rosemary sprig. Bring to a boil, scraping up browned bits.
  9. Boil for 5-7 minutes until reduced by half and syrupy. Remove rosemary sprig and stir in remaining 1 tablespoon butter.
  10. Return pork chops to the skillet, spoon glaze over them, and warm for 1 minute. Serve immediately.

Notes

For best results, use 1-inch thick bone-in pork chops. Do not overcrowd the pan; cook in batches if needed. Let pork chops rest before glazing. The glaze is best made fresh.
