  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • ⅓ cup (80ml) caramel sauce (store-bought or homemade)
  • 1 teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ½ cup (113g) cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish with butter or non-stick spray. Optionally line with parchment paper for easy cleanup.
  2. In a medium bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, caramel sauce, and vanilla extract. Toss until apples are well coated. Let sit while preparing streusel.
  3. In a large bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter or two forks, cut butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. Pour apple filling into prepared dish and spread evenly. Sprinkle streusel topping evenly over apples, leaving some loose and craggy. Drizzle extra caramel sauce on top if desired.
  5. Place dish on a baking sheet to catch overflow. Bake for 40-45 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly, tent loosely with foil after 30 minutes.
  6. Cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Let the crisp rest for at least 15 minutes after baking to allow the filling to set. Use cold butter for the streusel to ensure a crumbly texture. For extra flavor, toast the oats before making the streusel. Double the topping if you prefer extra crunch.
