  • Fresh raspberries or pomegranate arils for garnish

Instructions

  1. Bloom the gelatin: Pour 1/2 cup of the white grape juice into a small saucepan. Sprinkle the 3 tablespoons of unflavored gelatin powder evenly over the surface. Let it sit for 5 minutes without stirring.
  2. Heat gently: Place the saucepan over low heat. Warm the mixture slowly, whisking constantly, until the gelatin is completely dissolved (about 3-4 minutes). Do not let it boil.
  3. Add the remaining juice and sweetener: Remove from heat. Pour in the remaining 1.5 cups of white grape juice and the honey or agave syrup. Whisk until fully incorporated.
  4. Incorporate the bubbles: Let the mixture cool for about 10 minutes at room temperature. Gently pour in the sparkling water and stir slowly with a spoon to preserve bubbles.
  5. Add vanilla and glitter: Stir in the vanilla extract. If using edible glitter, sprinkle it in and give one more gentle stir.
  6. Fill the cups: Place shot cups on a baking sheet. Carefully pour the mixture into each cup, filling almost to the top.
  7. Chill to set: Refrigerate for at least 4 hours, preferably overnight, until firm.
  8. Add garnishes: Once set, add a fresh raspberry or pomegranate arils to the top of each shot. Optionally add extra edible glitter before serving.

Notes

Do not skip the blooming step. Temperature control is key: the mixture should be warm but not hot when adding sparkling water. For best results, make the night before. Store in the refrigerator for up to 5 days.
