A visually stunning, no-cook charcuterie board shaped like a pumpkin, featuring a wheel of brie, cubed cheddar and gouda, prosciutto stripes, and a cinnamon stick stem. Perfect for Halloween parties, it comes together in about 20 minutes and is completely customizable.

Ingredients

Scale
  • 1 large round wheel of Brie or Camembert (810 ounces)
  • 1 block sharp cheddar cheese (8 ounces), cubed or sliced
  • 1 block Gouda or Edam (8 ounces), cubed or sliced
  • 810 slices prosciutto
  • 810 slices salami or soppressata
  • 1 small cinnamon stick or 2-inch piece fresh rosemary stem
  • A few fresh sage or small basil leaves
  • 1 cup assorted crackers or crostini
  • 1/2 cup mixed nuts (almonds, pecans, walnuts)
  • 1/2 cup dried fruit (cranberries, apricots, figs)
  • 1/4 cup pumpkin seeds (pepitas)
  • Optional: 1/4 cup honey or fig jam

Instructions

  1. Prepare your board. Place a large wooden board or platter on your work surface, clean and dry.
  2. Create the pumpkin base shape. Arrange cubed cheddar and gouda in a large, rough circle in the center of the board, leaving a small space in the very center for the brie.
  3. Add the brie ‘top.’ Place the whole wheel of brie in the center of the cheese circle.
  4. Create the ‘stripes’ with prosciutto. Drape prosciutto slices over the brie and surrounding cheese cubes, starting from the top and letting them fall down the sides to create vertical stripes (about 6-8 stripes).
  5. Add the salami ‘ridges.’ Fold or roll salami slices and tuck them between the prosciutto stripes.
  6. Place the stem. Gently push the cinnamon stick or rosemary stem into the top center of the brie, angled slightly.
  7. Add the ‘leaves.’ Tuck fresh sage or basil leaves around the base of the stem.
  8. Fill in the gaps. Distribute crackers, nuts, dried fruit, and pumpkin seeds evenly around the pumpkin shape.
  9. Add finishing touches. If using honey or fig jam, spoon into a small ramekin and place near the edge of the board. Ensure no bare spots remain.
  10. Serve immediately or refrigerate. Best served at room temperature; remove from fridge 20 minutes before serving. If making ahead, cover loosely with plastic wrap and refrigerate for up to 2 hours.

Notes

Use room temperature cheese for best flavor. Don’t overthink the prosciutto stripes; an organic look is more natural. Build height with cheese cubes for a 3D effect. Balance flavors: salty, creamy, sharp, sweet, crunchy. Use a variety of cracker shapes. Can partially prepare ahead: cube cheese and arrange base a few hours in advance; add prosciutto, salami, brie, and jam just before serving. Avoid overcrowding the center.
