This easy 5-ingredient crockpot queso dip is creamy, flavorful, and perfect for game day. With Velveeta, cream cheese, Rotel, ground beef, and taco seasoning, it’s a crowd-pleaser that stays warm and smooth for hours.

  • 1 block (16 oz) Velveeta cheese, cut into 1-inch cubes
  • 1 block (8 oz) cream cheese, softened and cut into cubes
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
  • 1 lb ground beef (80/20)
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup milk (optional, to thin)
  • Fresh cilantro, chopped (optional, for garnish)
  • Jalapeño slices (optional, for garnish)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 6 to 8 minutes until fully cooked. Drain excess fat, leaving about 1 tablespoon.
  2. Sprinkle taco seasoning over the beef and add 1/4 cup water. Simmer for 2 to 3 minutes until thickened.
  3. While beef simmers, cut Velveeta and cream cheese into 1-inch cubes.
  4. Layer ingredients in a 3-4 quart crockpot: Velveeta cubes first, then cream cheese, undrained Rotel, and seasoned ground beef. Do not stir.
  5. Cover and cook on low for 1.5 to 2 hours. Stir at the 1-hour and 1.5-hour marks.
  6. If queso is too thick, stir in milk 1/4 cup at a time until desired consistency.
  7. Garnish with cilantro and jalapeño slices if desired. Serve warm from the crockpot on the ‘warm’ setting.

Notes

For best results, use room temperature cream cheese and cook on low. Stir at the 1-hour and 1.5-hour marks to prevent scorching. The queso can be made ahead and reheated; flavors improve overnight.
