A quick and flavorful game day snack featuring smoky BBQ brisket, melty cheese, and tangy pickled jalapeños layered over sturdy tortilla chips. Perfect for last-minute gatherings and tailgate parties.

Ingredients

Scale
  • 2 cups cooked BBQ brisket, shredded or chopped
  • ½ cup BBQ sauce
  • 1 large bag tortilla chips (about 1012 oz)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup pickled jalapeños, sliced
  • ½ cup diced red onions
  • ½ cup chopped fresh cilantro (optional)
  • ¼ cup sliced black olives (optional)
  • ½ cup sour cream or crema
  • 1 medium avocado, diced or sliced (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, toss the shredded brisket with about ½ cup of your favorite BBQ sauce until evenly coated.
  3. Spread an even layer of tortilla chips on a baking sheet or oven-safe tray without overcrowding.
  4. Scatter the BBQ-coated brisket evenly over the chips.
  5. Mix the shredded cheddar and Monterey Jack cheeses together, then sprinkle generously over the brisket and chips.
  6. Bake for 10-15 minutes until the cheese is fully melted and bubbly. For a crispier top, broil for the last 1-2 minutes, watching closely to avoid burning.
  7. Remove the nachos from the oven and immediately scatter the pickled jalapeños, diced red onions, black olives, and chopped cilantro on top.
  8. Dollop sour cream or crema over the nachos and add sliced avocado if using.
  9. Serve immediately while warm and fresh.

Notes

Use sturdy tortilla chips to prevent sogginess. Layer toppings thinly and consider layering chips, brisket, and cheese twice for better structure. Warm brisket in BBQ sauce before adding to keep it juicy. Watch the broiler closely to avoid burning cheese. For dairy-free, use vegan cheese and plant-based sour cream. For low-carb, substitute chips with pork rinds or baked cheese crisps. Leftovers keep well refrigerated for up to 2 days and reheat best in the oven at 350°F for 10-12 minutes.
