Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1 lb / 450 g), cut into bite-sized pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil or avocado oil (for searing)
  • 8 ounces (225 g) pasta (penne or rigatoni recommended)
  • Water and salt for boiling pasta
  • ½ cup mayonnaise
  • 2 tablespoons sriracha sauce (adjust to heat preference)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic, minced or finely grated
  • ¼ cup shredded Parmesan cheese (optional)
  • Chopped green onions or fresh cilantro (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Pat the chicken pieces dry with paper towels. Toss chicken with smoked paprika, garlic powder, salt, and pepper until evenly coated.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package instructions (9-11 minutes) until al dente. Reserve ½ cup pasta water, then drain and set pasta aside.
  3. In a medium bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, soy sauce, and minced garlic until smooth. Stir in Parmesan cheese if using. Adjust seasoning to taste.
  4. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and sear for 3-4 minutes without moving. Flip and cook another 3-4 minutes until golden and cooked through.
  5. Lower heat to medium. Add drained pasta to the skillet with chicken. Pour creamy spicy sauce over the top. Toss gently, adding reserved pasta water a tablespoon at a time until sauce coats pasta nicely and is silky.
  6. Sprinkle chopped green onions and sesame seeds over the dish. Serve immediately while warm and saucy.

Notes

If the sauce is too thick, add more reserved pasta water to loosen it. If too thin, add extra Parmesan cheese to thicken. Patting chicken dry before searing helps achieve a crispy crust. Adjust sriracha to control heat. Leftovers keep well refrigerated for up to 3 days but avoid freezing to prevent sauce separation.
