15-Minute Creamy Tuscan Salmon Recipe (Easy Dinner)

A quick and indulgent salmon dish with a velvety cream sauce, sun-dried tomatoes, and spinach, ready in just 15 minutes. Perfect for busy weeknights or impressing guests.

  • 2 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes (drained and chopped)
  • 1 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • 2 cups fresh spinach (packed)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt, black pepper, and 1/2 teaspoon of Italian seasoning. Let sit at room temperature for about 5 minutes.
  2. Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Let the butter melt and sizzle until it starts to foam.
  3. Place the salmon fillets in the hot pan, skin-side down. Press down gently with a spatula for 5 seconds. Cook for 4 minutes without moving them, until deep golden-brown.
  4. Flip the salmon carefully and cook for another 2-3 minutes, until opaque and flaky. Transfer to a plate and tent loosely with foil to keep warm.
  5. Reduce heat to medium. Add the remaining 1 tablespoon of butter to the pan. Once melted, add minced garlic and cook for 30 seconds, stirring constantly.
  6. Add the chopped sun-dried tomatoes and cook for 1 minute, stirring occasionally.
  7. Pour in the chicken broth and scrape up browned bits from the pan with a wooden spoon. Let simmer for about 1 minute.
  8. Pour in the heavy cream and stir well. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  9. Stir in the fresh spinach and let wilt for about 1 minute. Add the grated Parmesan cheese and remaining 1/2 teaspoon of Italian seasoning. Stir until cheese is melted and sauce is smooth. Add red pepper flakes if using.
  10. Return the salmon fillets to the skillet, nestling them into the sauce. Spoon some sauce over the top. Heat through for about 1 minute.
  11. Taste and adjust seasoning with salt and pepper as needed.
  12. Serve immediately, garnished with fresh parsley or basil if desired.

Notes

Pat salmon dry for best sear. Don’t overcrowd the pan. Watch garlic to avoid burning. Simmer cream gently to prevent separation. Grate your own Parmesan for smooth sauce. Leftovers can be stored in the fridge for up to 2 days; reheat gently on stovetop with a splash of cream or broth.
