  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds, toasted
  • 1/3 cup crumbled feta cheese or goat cheese (optional)

  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar or white wine vinegar
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and thoroughly dry 6 cups of baby spinach. Slice 2 cups of fresh strawberries into thin, even pieces. Thinly slice 1/4 cup of red onion. Set aside.
  2. Heat a dry skillet over medium heat and toast 1/2 cup sliced almonds until golden and fragrant, about 3-4 minutes. Stir frequently to avoid burning. Remove from heat and let cool.
  3. In a medium bowl or jar, combine 1/2 cup mayonnaise, 1/4 cup plain Greek yogurt, 2 tablespoons honey, 2 tablespoons apple cider vinegar, 1 tablespoon poppy seeds, and 1/2 teaspoon Dijon mustard. Whisk or shake vigorously until smooth and creamy. Season with salt and pepper to taste.
  4. In a large bowl, combine the spinach, sliced strawberries, toasted almonds, thinly sliced red onions, and 1/3 cup crumbled feta cheese if using. Drizzle the creamy poppyseed dressing over the top—start with about half and toss gently to coat. Add more dressing as desired.
  5. Serve the salad immediately for best texture and flavor.
