  • 1 cup strawberries, hulled and halved
  • 1 cup seedless green grapes, halved
  • 1 cup mandarin orange segments (canned or fresh)
  • 1 large kiwi, peeled and sliced
  • 1/2 cup fresh orange juice (about 1 large orange)
  • 1/4 cup sparkling citrus soda (e.g., San Pellegrino Aranciata or similar)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon orange zest
  • Optional garnishes: fresh mint leaves, edible flowers

Instructions

  1. Wash all fresh fruit thoroughly. Hull and halve the strawberries, slice the kiwi, halve the grapes, cut pineapple into bite-sized chunks, and drain mandarin oranges if canned.
  2. In a small bowl, whisk together fresh orange juice, sparkling citrus soda, honey, fresh lemon juice, and orange zest until honey dissolves. Adjust sweetness to taste.
  3. Place all prepped fruit in a large mixing bowl. Pour the citrus glaze over the fruit and gently toss until lightly coated, being careful not to mush the fruit.
  4. Optional: Cover and refrigerate for at least 15 minutes to let flavors meld and chill.
  5. Transfer the fruit salad to a serving bowl or individual glasses. Garnish with fresh mint leaves or edible flowers if desired. Serve chilled.

Notes

Add sparkling soda just before serving to keep fizz fresh. Use ripe but firm fruit to avoid sogginess. For vegan option, substitute honey with maple syrup. Gently toss fruit to avoid mushiness. Refrigerate covered to prevent absorption of fridge odors.
