  • ⅓ cup (75g) unsalted butter, melted plus extra for brushing
  • 2 large eggs, room temperature
  • 1 teaspoon salt
  • Optional: 1 egg beaten with 1 tablespoon water (egg wash)
  • Optional: pinch of sea salt flakes for topping

Instructions

  1. Proof the yeast: In a small bowl, combine warm whole milk (110°F/43°C), sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl or stand mixer, whisk together sifted flour and salt. Add proofed yeast mixture, melted butter, honey, and eggs. Stir until a shaggy dough forms.
  3. Knead the dough: Turn dough onto floured surface and knead 8-10 minutes until smooth and elastic, or knead with stand mixer dough hook on medium speed for 6-7 minutes. Dough should be tacky but not sticky.
  4. First rise: Lightly grease a large bowl with butter, place dough inside, cover, and let rise in warm, draft-free spot for 1 to 1 ½ hours until doubled in size.
  5. Shape the rolls: Punch down dough, turn onto floured surface, divide into 12 equal pieces (~2.5 oz each). Shape each into smooth balls.
  6. Second rise: Arrange dough balls in a 9×13-inch baking pan, cover loosely, and let rise 30-40 minutes until puffy and nearly touching.
  7. Preheat oven to 350°F (175°C) about 15 minutes before baking.
  8. Optional egg wash: Brush tops with beaten egg wash for shiny crust.
  9. Bake: Bake rolls for 20-25 minutes until golden and hollow sounding when tapped.
  10. Honey butter finish: Immediately brush rolls with melted butter mixed with honey after baking.
  11. Cool and serve: Let cool in pan for 10 minutes before serving warm.

Notes

Ensure yeast is fresh and milk is not too hot to avoid killing yeast. Knead dough until smooth and elastic. Brush rolls immediately after baking with honey butter to lock in moisture and add shine. For a crustier top, skip egg wash. Dough can be prepared the night before and risen slowly in the fridge.
