Flavorful Maple Glazed Carrots with Fresh Thyme

Sweet, caramelized maple syrup coats tender roasted carrots infused with fresh thyme, creating a comforting and flavorful side dish perfect for any occasion.

  • 1 pound (450g) carrots, peeled and cut into uniform sticks or baby carrots
  • 3 tablespoons pure maple syrup (Grade A amber recommended)
  • 1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • 1 clove garlic, minced (optional)
  • 1 tablespoon butter (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut about 1 pound (450g) of carrots into uniform sticks or use baby carrots.
  3. In a mixing bowl, combine 2 tablespoons olive oil, ½ teaspoon salt, ¼ teaspoon freshly ground black pepper, and minced garlic if using. Toss the carrots in this mixture until fully coated.
  4. Spread the carrots evenly on a rimmed baking sheet in a single layer.
  5. Roast for 20-25 minutes, flipping the carrots halfway through (around 12 minutes) to brown evenly. Carrots should be tender but still have a slight bite.
  6. While the carrots roast, mix the glaze by combining 3 tablespoons pure maple syrup with 1 tablespoon fresh thyme (finely chopped). If using butter, melt 1 tablespoon and whisk it in.
  7. Once the carrots are done roasting, remove from the oven and immediately toss them with the maple-thyme glaze.
  8. Return the glazed carrots to the oven for an additional 5 minutes to let the glaze thicken and coat the carrots.
  9. Remove from the oven and let cool slightly before serving. Adjust salt or thyme if needed.

Notes

If carrots start browning too fast, tent the baking sheet with foil to avoid burning. Toss carrots in glaze while hot for best coating. For dairy-free, omit butter or substitute with coconut oil. Fresh thyme is preferred for best flavor but dried thyme works in a pinch. Adding a pinch of cayenne pepper to the glaze adds a subtle heat.
