A quick and easy baked cod recipe featuring a crispy lemon butter coating paired with tender green beans, perfect for a satisfying weeknight dinner.

  • pounds (680g) fresh cod fillets, skin removed
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • ½ cup panko breadcrumbs (use gluten-free if needed)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried parsley or 1 tablespoon fresh, chopped (optional)
  • 1 pound (450g) fresh green beans, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. In a small bowl, whisk together the melted butter, minced garlic, lemon zest, and lemon juice.
  3. Pat the cod dry with paper towels. Season both sides with salt and freshly ground black pepper.
  4. Brush the lemon butter mixture generously over both sides of each cod fillet. Press the top side of the fillets into the panko breadcrumbs mixed with parsley, coating well. Place fillets on the prepared baking sheet, breadcrumb side up.
  5. In a bowl, toss the trimmed green beans with olive oil, salt, pepper, and lemon zest. Spread them out in a single layer around the cod fillets on the baking sheet.
  6. Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork, and the breadcrumbs are golden and crispy. The green beans should be tender-crisp.
  7. Optional: Broil for 1-2 minutes to achieve extra crispness, watching carefully to prevent burning.
  8. Serve immediately, spooning any buttery pan juices over the top and garnishing with extra lemon wedges if desired.

Notes

Pat the cod dry before seasoning to ensure the coating sticks and becomes crispy. Use room temperature butter for better blending. Avoid overcrowding the pan to allow even cooking and crispiness. Broil briefly at the end for extra crunch if desired. If oven runs hot, reduce temperature by 25°F (15°C).
