  • 1 lb (450 g) breakfast sausage, crumbled and cooked
  • 8 large eggs, room temperature
  • 1 cup (240 ml) whole milk
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped green onions or fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sausage: Heat your skillet over medium heat and add the breakfast sausage. Break it apart with your spatula and cook until browned and cooked through, about 7-8 minutes. Drain any excess grease.
  3. Sauté onions and garlic: In the same skillet, add the diced onion and minced garlic. Cook for 2-3 minutes until fragrant and softened. Remove from heat.
  4. Layer the tater tots: Spread the frozen tater tots evenly in the bottom of your baking dish. No need to thaw them.
  5. Add the sausage mixture: Spoon the cooked sausage, onion, and garlic evenly over the tater tots.
  6. Mix the eggs and milk: In your mixing bowl, whisk together the eggs, whole milk, salt, and black pepper until fully combined and slightly frothy.
  7. Pour the egg mixture: Slowly pour the egg mixture over the tater tots and sausage layer, making sure it seeps through evenly.
  8. Add the cheese: Sprinkle the shredded cheddar and mozzarella evenly over the top.
  9. Bake: Place the casserole in the preheated oven and bake for 40-45 minutes until the eggs are set and the cheese is golden and bubbly.
  10. Rest before serving: Let the casserole cool for about 5 minutes before slicing.

Notes

Do not thaw tater tots before baking to keep them crispy. Drain excess grease from sausage to avoid sogginess. If cheese browns too quickly, cover loosely with foil halfway through baking. For extra crispiness, broil for last 2 minutes but watch carefully. Let casserole rest before slicing to set properly. Can be made ahead and refrigerated overnight; add 5-10 minutes to baking time if baking from cold.
