  • 8 cups cubed brioche or challah bread (day-old preferred)
  • 8 large eggs, room temperature
  • 2 cups whole milk or half-and-half
  • 8 ounces cream cheese, softened and cut into small cubes
  • 1 ½ cups fresh or frozen blueberries
  • ⅓ cup granulated sugar
  • 1 tablespoon granulated sugar (for topping)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2 tablespoons melted butter

Instructions

  1. Cube brioche or challah into 1-inch pieces. If bread is fresh, toast lightly at 300°F for 10 minutes to dry.
  2. In a large bowl, whisk together eggs, milk, ⅓ cup sugar, vanilla extract, cinnamon, and salt until smooth and frothy.
  3. Grease a 9×13 inch baking dish with melted butter. Layer half the bread cubes, half the cream cheese cubes, and half the blueberries. Repeat layers.
  4. Pour custard mixture over the layered bread, pressing gently to soak. Let sit for 10 minutes.
  5. Preheat oven to 350°F. Sprinkle 1 tablespoon sugar over the top.
  6. Cover dish with foil and bake for 35 minutes. Remove foil and bake an additional 15 minutes until golden and custard is set.
  7. Cool for 10 minutes before slicing and serving.

Notes

Use day-old or lightly toasted bread to prevent sogginess. Be gentle when folding in blueberries and cream cheese to keep texture. Let custard soak for at least 10 minutes. Tent with foil if top browns too quickly.
